3 Oysters - Delicious Mustard
Mustard is part of 3 Oysters’ Delicious series. Ranging from a wonderful, deep, burnt yellow to a muddy, golden honey, this is a rich, earthy mustard that mimics the colors of its namesake.
In Korea, mustard is generally used in the form of a dressing or dip. It‘s most commonly served over cold seafood salads, including shrimp or jellyfish. (If you haven’t tried jellyfish, don’t write it off. It isn’t packed with flavor, but has a nice soft, snappy texture.)
3 Oysters Mustard is a nice shading ink, and the lights and darks work well together. The lighter tones are golden yellows, but in wetter application it is really more of a honey brown.
In writing, strokes are crisp, and well-defined, with no signs of feathering. This is a very easy-to-read ink. Drying time is where things get . . . interesting. In finer, drier nibs this is a very quick drying ink. It dries almost instantly! However, in broader, wetter nibs everything changes. It dries much more slowly in wetter application, taking 45 seconds, a minute, or even longer in some cases. As you can see in the ink splash (Rhodia 80g), the darkest areas of pooling remained slightly wet even 24 hours after the ink hit the paper! The ink splash is, of course, an extreme example.
As a writing ink, 45 seconds isn’t a deal-breaker for most people, but this is definitely something to keep in mind. All-in-all, 3 Oysters Delicious Mustard is a beautiful, earthy, golden yellow brown, and that’s a category that’s often difficult to get right. I love it when it’s done well, like it is here. It’s also a nice shading ink, with a lot of character. If you’re using a finer, drier nib, I can easily recommend it. If not, keep the drying time in mind. If that doesn’t bother you, then grab a bottle and enjoy!
